Z: Zoodles

Subbing zucchini noodles, or “zoodles,” for pasta is a great way to cut carbs or just add more veggies to your diet. It’s also pretty easy to do with a spiralizer, though many grocery stores have them pre-made for you in the produce section.

There are many way you can cook your zoodles. This recipe is great as either a side or the entree. You can also use a mixture of green zucchini and yellow summer squash to give the dish more color.



6 zucchini

2 tsp salt

3 Tbsp butter

1 clove garlic, minced

salt and pepper to taste

1/4 cup Parmesan cheese


  1. Use the spiralizer to make the zucchini noodles. Toss with the 2 tsp salt and place in a colander to drain for 30 minutes.
  2. Melt the butter in a skillet. Add the zoodles and garlic. Cook on medium until the zoodles are tender, about 5 minutes.
  3. Season to taste with salt and pepper.
  4. Sprinkle with the cheese and serve.
